Healthy Quinoa Chicken Salad

Hi friends! One of my favorite things to make year round is chicken salad. Recently while making some there was some left over quinoa in the fridge and I though, ‘why not.’ So I added some into the mixture and it made the flavor even better! I decided to share my chicken salad recipe with you all as well. Hope you think it is as delicious as I do!Chicken Salad


2 Cans of Chicken

1 Cup of Quinoa

2 Stalks of Celery

2 Carrots

1 Onion

1 Apple

1 Tablespoon of Garlic

1 Small handful of Cranberries

1/2 Cup of Low Fat Mayonnaise

1/4 Cup of Relish

1 Teaspoon of Mustard


Step 1: Put one cup of quinoa in a medium sized bowl.

IMG_6123Step 2: Finely chop the carrots, celery, onion, apple and cranberries. Once chopped add them to the bowl.

I like using the apple and cranberries for a dash of sweet flavor since the other vegetables are strong in their flavor and it compliments the quinoa.

Step 3: Open the cans of chicken with a can opener. Drain the juice from the chicken and then finely chop. below is what the ckicken should look like once chopped.


IMG_6136Step 4: Add the chopped chicken to the other ingredients in the bowl.

Step 5: Add the condiments to the other ingredients to the bowl.



Step 6: Mix all of the ingredients together.

Finished Product


Once made, let the chicken salad sit in the fridge for 30 minutes to help the mixture ‘gel’ and become even more delicious!!

Hey ya’ll, it’s officially fall!!

One of my favorite things about fall is crock pot meals. I love coming home after a long day of work and having the apartment smelling like I cooked for hours and dinner already prepared!

Last fall Paul and I purchased a light timer for the crock pot that was a game changer. Really. We would be able to leave the house in the morning, the timer turn the crock pot on in the afternoon and dinner be ready by the time we got home. It is such a luxury to not have to worry about cooking at night.

With fall here there are so many great recipes from breakfast through dessert that you can do in the crock pot. Here are a few of my favorites.



Breakfast casseroles are the best to make in the colder months.  I love filling the crock pot at night and waking up in the morning to a warm, delicious breakfast waiting for me to eat. Here is one that I make frequently in the fall: Breakfast Casserole



One of the perfect lunches to eat is a hearty soup. By making a soup the day before in a crock pot you can portion it out for the rest of the week. Also, if you make a large amount you can freeze it and have it for later weeks. For me, my favorite is a delicious potato soup! Here is a recipe for one that is my go to: Potato Soup



Pot Roast–The perfect hearty meal after a long day at work or even for a cozy weekend is pot roast. Also, by making your own broth and having more vegetables you can cancel out a lot of the sodium and create a healthier dish.

With the left over stock store it in the freezer and use it as the broth starter for the next pot roast!


Baked apples are the perfect fall dessert. Having the apples simmer for a few hours on low with a Apple Piepumpkin cinnamon seasoning is truly mouthwatering! Once the apples have simmered pop some dough on top and bake for a mini pie!

Healthy RecipesRecently, Paul and I have kicked our fitness and healthy eating up a notch. And when I say recently I mean last week. And when I say kicked it up a notch I mean no more Big Box pizzas from Pizza Hut, McDonalds, and dessert every night. Hahaha. But really.

We had gotten in a major rut due to laziness and convenience. It is easy to eat badly, which is why I have been on the hunt for some new, easy recipes to incorporate into our everyday lives.

Mouth Watering BBQ

Since marrying a North Carolina boy I have wanted to make him some delicious BBQ!! Last weekend I decided to try making a simple, yet delicious recipe.

Step 1: 

Once putting the meat in the crock pot, rub a mixture of seasonings on it to create what will be the flavor of the BBQ.

BBQ Spices

I used: IMG_4424

1 Tsp Pepper

1 Tsp Garlic Powder

1 Tsp Smoked Paprika

1 Tsp Chili Powder

1/2 Tsp Salt

1/2 Tsp Cumin

1/2 Tsp Red Pepper

I picked these based on other recipes I had read and modified it based on what I knew Paul and I would enjoy.

Step 2: 

Let the meat cook for 4 hours on low.


Step 3: 

Peal apart the meat into strips.


Step 4: 




Add 1/2 a can of Diet Coke and 1/4 Cup of Apple Cider Vinegar


By adding the Diet Coke it keeps the meat from becoming dry and adds even more flavor!





Step 5: 

Let the meat cook for 3 more hours on low.

After the three hours the meat is done! Also, in the picture below you can see how after cooking it longer and adding the Diet Coke and Apple Cider Vinegar the BBQ meat is the ‘perfect’ color!


The finished product was amazing and full of flavor! Paul even loved it!!




Once done, create a delicious sandwich! I even added some cheese to mine!

Turkey Delight: Recipe

Turkey is not just for Thanksgiving, but is great year round. A recipe I have been tweaking over the past couple of months is my baked ‘Turkey Delight’. It is so easy to make and great for you. I used to use this recipe with baked chicken but find that with turkey it tastes even better and we tend to eat a lot of chicken so it is good to mix it up.

For Weight Watchers one serving, 1/2 cup, is 5 points. The amount that is cooked in this recipe gives 4 servings. That is enough for 2 hearty meals for Paul and I or dinner for a family of four! This recipe takes about 10 minutes of prep time. Once prepped it cooks at 350 degrees for 1 hour.



  1. Turkey: We use turkey tenderloin because it is lean and there are no bones to worry about.
  2. Spray Canola Oil
  3. Lemon Juice: As much as desired. I use 1 Tbsp.
  4. Herbs: Rosemary, Thyme, Italian Melody (Mrs. Dash brand is salt free which is great!)
  5. Tea: I usually choose a berry flavor with green tea. This can be whatever you prefer.
  6. Honey: 1 Tsp.
  7. Carrots
  8. Garlic
  9. Onion
  10. Dried Cranberries: Because cranberry sauce is full of sugar this is a great alternative to get that berry taste.

Step 1:

Spray the pan with Canola Oil and season the turkey with the seasonings and lemon juice.

Step 2: 

Make the tea. I use two cups of water and put all three packets of tea in the water. I add a teaspoon of honey to the tea as well for sweetness. Once the tea has steeped for about 5 minutes it is add it to the pan with the turkey.

-While the tea is steeping I do Step 3.


Step 3:

Cut the vegetables. You may use as much as desired. I ended up using all of the carrots shown above, 3 pieces of garlic from the clove, and half of the onion.


Step 4: 

Add the vegetables and dried cranberries.


This is what the dish will look like once everything has been added.

Step 5: 

Put the dish in the oven at 350 degrees for 1 hour. At the half hour mark I usually check it and stir the ingredients.

The finished product: 


Don’t be alarmed by the color of the broth. That is determined by the color of the tea used and once cooked it changes due to temperature, the turkey, herbs, and etc. in the dish.

Dinner is served!! 


1 Serving of Turkey: 5 Points 

1/2 Cup of Rice: 4 Points 

3/4 Cup of Sweet Potato: 3 Points 

= 12 Points for Dinner!!

This dish is also delicious cooking in a crock pot on low for 5 hours!

Another meal that could be made from this dish is to: Shred the turkey once cooked, add noodles and more broth. Thus, making turkey soup!

From leftovers the turkey could be used in a stir fry, turkey salad, BBQ, or even tacos.
